Ingredients
  

Cupcake Ingredients

  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup powdered hot chocolate mix
  • 3/4 cup unsweetened cocoa powder
  • 2 large eggs should be at room temperature
  • 1 cup milk should be at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup vegetable oil
  • 1 cup boiling water to add moisture

Frosting Ingredients

  • 1/2 cup unsalted butter at room temperature
  • 7 ounces marshmallow fluff
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Optional Garnish

  • mini marshmallows
  • mini candy canes crushed
  • chocolate syrup
  • cocoa powder for dusting

Instructions
 

Preparation

  • Preheat your oven to 325°F.

Mix Dry Ingredients

  • In a large mixing bowl, whisk together the flour, sugar, baking soda, salt, hot chocolate mix, and cocoa powder.

Mix Wet Ingredients

  • Add the eggs, milk, and vegetable oil to the dry ingredients and mix until smooth and creamy.
  • Stir in the vanilla extract.

Add Boiling Water

  • Carefully mix in the boiling water until well incorporated; the batter will be thin.

Prepare for Baking

  • Line a cupcake tray with liners and fill each about halfway with the batter.

Bake

  • Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Frost

  • Allow cupcakes to cool in the tray for a few minutes, then transfer to a wire rack to cool completely.
  • For the frosting, blend the butter and marshmallow fluff until smooth, then gradually mix in the powdered sugar and vanilla extract until fluffy.
  • Once cupcakes are cool, pipe the marshmallow frosting on top.

Decorate

  • Add optional garnishes such as mini marshmallows, crushed candy canes, chocolate syrup, or cocoa powder.
