Hot Honey BBQ Chicken Quesadillas

These quesadillas combine shredded chicken, tangy BBQ sauce, and sweet hot honey, all melted together with cheese in a crispy tortilla, perfect for any gathering.

Ingredients
  

Quesadilla Filling

  • 2 cups cooked, shredded chicken
  • 1 cup BBQ sauce Choose quality BBQ sauce for best flavor.
  • 1/2 cup hot honey Can adjust for desired sweetness.
  • 2 cups shredded cheese (Cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 tablespoon olive oil or cooking spray
  • 1/4 cup chopped fresh cilantro Optional, for garnish.
  • 1/2 cup diced red onion Optional, for added flavor.

Instructions
 

Preparation

  • In a medium bowl, combine the shredded chicken, BBQ sauce, and hot honey. Mix until well-coated.
  • Heat the Blackstone griddle over medium heat. If using olive oil, spread it across the surface or lightly spray with cooking spray.

Cooking

  • Place one flour tortilla on the griddle. Sprinkle half of the shredded cheese over one half of the tortilla.
  • Spoon half of the BBQ chicken mixture over the cheese. If desired, add diced red onion and cilantro.
  • Top with the remaining cheese, then fold the tortilla in half.
  • Cook for 3-4 minutes or until the bottom is golden brown and the cheese starts to melt.
  • Carefully flip the quesadilla and cook the other side for another 3-4 minutes.
  • Remove from griddle and repeat the process with the remaining tortillas and filling.
  • Let quesadillas cool slightly before slicing.

Notes

Serve hot with extra BBQ sauce and hot honey for dipping. Garnish with additional cilantro or green onions for presentation.
