  • 2 medium sweet potatoes Washed and peeled, cut into cubes
  • 1 tablespoon olive oil For tossing the sweet potatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste For seasoning

For the Beef

  • 1 pound ground beef Cooked until browned
  • Salt and pepper to taste For seasoning

For Assembly

  • 1 cup cottage cheese For topping
  • 2 tablespoons hot honey For drizzling
  • Fresh herbs for garnish (like chives or parsley)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the sweet potatoes. Cut them into cubes.
  • Toss the sweet potato cubes in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.

Roasting Sweet Potatoes

  • Spread the sweet potatoes on a baking sheet in a single layer.
  • Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and tender.

Cooking the Beef

  • While the sweet potatoes roast, heat a skillet over medium heat.
  • Add the ground beef and cook until browned, about 6-8 minutes, crumbling the beef as it cooks.
  • Season the beef with salt and pepper to taste.

Assembly

  • Once the sweet potatoes are done, remove them from the oven.
  • In a bowl, start with a generous serving of roasted sweet potatoes at the base.
  • Add a layer of the cooked ground beef on top of the sweet potatoes.
  • Spoon cottage cheese over the beef and drizzle hot honey over the top generously.
  • Garnish with fresh herbs, if desired.
  • Serve immediately while warm.
