Hot Honey Ground Beef & Roasted Sweet Potato Boats

Ingredients
  

For the sweet potatoes

  • 2 medium sweet potatoes Firm and free of blemishes for best results.

For the beef filling

  • 1 pound ground beef Can substitute with turkey or chicken for leaner options.
  • 2 tablespoons hot honey Adjust amount for desired heat level.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper To taste

Toppings

  • 1 cup shredded cheese Cheddar, Monterey Jack, or pepper jack as options.
  • 1/2 cup chopped green onions For garnish.
  • 1/4 cup chopped fresh cilantro Optional garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and roast for about 45-60 minutes, or until tender.

Cooking

  • While the sweet potatoes are roasting, heat a large skillet over medium heat.
  • Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned, about 7-10 minutes.
  • Drain any excess fat. Stir in hot honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for an additional 2-3 minutes.

Assembly

  • Once cooked, remove the browned beef from the heat and set aside.
  • When the sweet potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out some flesh to create a boat shape.
  • Fill each sweet potato half with the hot honey ground beef mixture, pressing down gently.
  • Top with shredded cheese and return to the oven for about 5-10 minutes, or until the cheese melts.
  • Remove from the oven, garnish with green onions and cilantro if desired, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, wrap sweet potato boats in plastic wrap and freeze for up to 2 months.
