Ingredients
  

For the sweet potato boats

  • 4 medium sweet potatoes Wash and scrub before baking.

For the filling

  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 cup corn kernels Fresh or frozen.
  • 2 tablespoons hot honey Adds a sweet and spicy kick.
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese Cheddar or your choice.
  • Fresh cilantro or green onions for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes. Poke holes in each potato with a fork to allow steam to escape.
  • Place the sweet potatoes on a baking sheet lined with parchment paper and bake for about 45-60 minutes or until tender.

Cooking the filling

  • In a skillet over medium heat, add a drizzle of oil and sauté the diced onion until translucent.
  • Add the minced garlic and bell pepper, cooking for an additional 2-3 minutes.
  • Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it into smaller pieces as it cooks.
  • Stir in the corn, smoked paprika, cumin, hot honey, and soy sauce. Season with salt and pepper. Cook for an additional 5 minutes until heated through.

Assembling the boats

  • Once the sweet potatoes are tender, remove them from the oven and let cool slightly.
  • Carefully cut each sweet potato in half lengthwise and scoop out some flesh from each half, creating a boat.
  • Fill each potato half with the hot honey ground beef mixture, mounding it generously.
  • Top each filled boat with shredded cheese and return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven, garnish with fresh cilantro or green onions, and serve warm.
