  • Salt and pepper to taste

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and sauté until translucent and fragrant, about 4-5 minutes.
  • Introduce the sliced mushrooms and cook until they start to brown, stirring occasionally.
  • Season the chicken breasts with salt and pepper, then add them to the skillet.
  • Sear the chicken for about 4-5 minutes per side until golden.
  • Pour in the diced tomatoes and chicken broth, sprinkle with thyme, and stir.

Cooking

  • Bring the mixture to a gentle simmer, cover, and let it cook for about 20 minutes, until the chicken is fully cooked (internal temperature of 165°F/74°C).

Serving

  • Remove from heat, garnish with fresh parsley, and serve warm.

Notes

To elevate the dish, use fresh ingredients and properly brown the chicken. The recipe can be made ahead and reheat well. Try adding bell peppers or replacing thyme with oregano for variations.
