Impressive Cranberry Brie Stuffed Chicken

Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Choose similar sizes for even cooking.
  • 1 tablespoon olive oil For searing the chicken.
  • 1/4 cup chopped fresh parsley For garnish.
  • 1/2 cup panko breadcrumbs For a crunchy topping.
  • 1 tablespoon butter, melted To mix with breadcrumbs.
  • 1 teaspoon salt To season the chicken and filling.
  • 1/4 teaspoon black pepper To season the chicken and filling.
  • 4 ounces brie cheese Rind removed and cut into small pieces.

For the Cranberry Filling

  • 1/2 cup fresh cranberries Fresh cranberries are recommended for best flavor.
  • 1/4 cup honey To add sweetness to the filling.
  • 1/4 cup orange juice Freshly squeezed is better.
  • 1/4 teaspoon ground cinnamon For flavoring the cranberry mixture.
  • 1/4 teaspoon ground ginger To enhance the taste.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a medium saucepan, heat the olive oil over medium heat. Add fresh cranberries and stir for about five minutes until they begin to soften.
  • Stir in honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper. Cook for an additional 3 to 4 minutes until thickened. Allow to cool.
  • Cut a pocket into the center of each chicken breast, being careful not to cut through completely.
  • Stuff each pocket with pieces of brie cheese followed by the cooled cranberry mixture.
  • Use toothpicks to secure the openings of each stuffed chicken breast.

Cooking

  • In a large oven-safe skillet, heat a little olive oil over medium-high heat. Sear each stuffed chicken breast for 2 to 3 minutes until golden brown.
  • Mix panko breadcrumbs with melted butter and spread over the stuffed chicken breasts.
  • Transfer the skillet to the preheated oven and bake for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  • Let the chicken rest for 5 minutes after baking and garnish with chopped parsley.

Notes
