Ingredients

Main Ingredients

  • 2 pounds beef stew meat, cut into cubes Chuck roast or round roast is preferred for tenderness.
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

Preparation

  • Turn on the Instant Pot and set it to the sauté function. Add the olive oil and let it heat up.
  • Add the beef stew meat cubes and brown them on all sides for 4-5 minutes.
  • Add the chopped onion and minced garlic to the pot and sauté until the onion becomes translucent, about 3-4 minutes.
  • Pour in the beef broth and Worcestershire sauce, scraping up any browned bits on the bottom of the pot.
  • Stir in the sliced carrots, diced potatoes, dried thyme, and season with salt and pepper to taste.

Cooking

  • Close the lid of the Instant Pot, ensuring it’s properly sealed. Set it to high pressure and cook for 35 minutes.
  • Once cooking time is complete, let the pressure release naturally for 10 minutes before quick-releasing any remaining pressure.

Final Touches

  • Open the lid and gently stir the stew. Adjust seasoning as needed before serving.

Notes

Serve with fresh parsley on top, or with warm crusty bread, rice, or mashed potatoes. This stew reheats beautifully and is great for meal prep.
