Ingredients
  

For the chicken

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Preparation

  • Season the chicken breasts with salt, pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning.
  • Set the Instant Pot to sauté mode and add olive oil. Once hot, sear the chicken breasts for about 2-3 minutes per side until golden brown.
  • Remove the chicken and set aside. Add chicken broth to the pot, scraping the bottom to remove any brown bits.
  • Return the chicken to the pot, ensuring it is submerged in the broth.
  • Close the lid and set the Instant Pot to manual high pressure for 10 minutes, making sure the valve is in the sealing position.
  • After cooking, allow for a natural pressure release for about 5-10 minutes before switching the valve to venting.
  • Carefully open the lid and check the chicken's internal temperature to ensure it reaches at least 165°F (75°C).
  • Remove the chicken and let it rest for a few minutes before slicing or shredding. Use the cooking liquid as a sauce or broth.
