Ingredients
  

  • 2 1/2 pounds chuck roast
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 2 tablespoons lime juice
  • Fresh cilantro (optional)

Instructions
 

  • Rub the chuck roast generously with onion powder, garlic powder, cumin, oregano, and pepper.
  • Set Instant Pot to 'Sauté' mode. Add olive oil and sear the roast on both sides until browned.
  • Add beef broth to the pot, then cover and seal. Cook on high pressure for 60 minutes.
  • Allow the pressure to release naturally. Once done, shred the beef using forks and stir in lime juice.
  • Garnish with fresh cilantro if desired and serve as tacos, salads, or sandwiches.
