Main Ingredients

  • 1 lb ground turkey Lean ground turkey works best for this recipe.
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup bell peppers, chopped Variety of colors can be used.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Freshly minced garlic preferred.
  • 2 tablespoons chili powder Adjust to taste.
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup chicken broth Can use vegetable broth for a vegetarian version.

  • Set your Instant Pot to sauté mode. Add the ground turkey and cook until browned, about 5 to 7 minutes, breaking it apart while cooking.
  • Add the chopped onion, minced garlic, and diced bell peppers. Sauté for about 2 to 3 minutes until softened.
  • Sprinkle in the chili powder, cumin, salt, and pepper. Stir to incorporate the spices.
  • Add the drained kidney beans, black beans, diced tomatoes, and chicken broth. Mix well.
  • Close the lid of the Instant Pot with the valve set to sealing. Cook on high pressure for 20 minutes.
  • Carefully release the pressure according to manufacturer’s instructions. Open the lid and stir the chili. Adjust seasoning if necessary before serving.

Notes

Garnish with cilantro, lime juice, sour cream, or shredded cheese. Great served with cornbread or tortilla chips. Store leftovers in airtight containers; can be refrigerated for up to five days or frozen for three months.
