  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup heavy cream For a rich sauce
  • 1/2 cup Irish whiskey Good-quality whiskey recommended
  • 1 tablespoon olive oil For cooking the chicken
  • 2 cloves garlic, minced For flavor
  • 1 small onion, diced To add sweetness
  • to taste Salt and pepper For seasoning
  • to garnish Parsley Freshly chopped for serving

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts generously with salt and pepper.
  • Add chicken to the skillet and cook for about 6 to 7 minutes on each side until nicely browned and cooked through.
  • Remove chicken from skillet and set aside.

Cooking the sauce

  • In the same skillet, add diced onions and sauté until translucent, about 3 to 4 minutes.
  • Add minced garlic and cook for an additional minute.
  • Pour in Irish whiskey and scrape up any browned bits from the bottom of the pan. Let simmer to reduce slightly.
  • Gradually stir in heavy cream until the sauce is smooth.
  • Return cooked chicken to the skillet and spoon sauce over each piece.
  • Allow chicken to simmer in the sauce for about 5 to 10 minutes.
  • Garnish with freshly chopped parsley before serving.

Notes

For extra tenderness, marinate chicken in whiskey and olive oil for an hour before cooking. Serve with mashed potatoes or rice, and pour extra sauce over them for added flavor.
