  • 4 pieces boneless, skinless chicken breasts
  • 1 cup Irish whiskey Choose a moderately-priced whiskey for best flavor.
  • 1 cup heavy cream
  • 2 tablespoons olive oil For cooking the chicken.

Aromatics

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish Enhances presentation.

Preparation

  • Begin by heating the olive oil in a large skillet over medium heat.
  • While the oil is heating, season both sides of the chicken breasts generously with salt and pepper.
  • Once the oil is shimmering, add the chopped onion and minced garlic to the skillet. Sauté for about 3 to 4 minutes until the onions turn translucent.
  • Carefully place the seasoned chicken breasts in the skillet. Cook for approximately 5 to 7 minutes on each side, aiming for a nice golden brown color.
  • After the chicken is browned, pour in the Irish whiskey and let it simmer gently to lift the fond from the bottom of the skillet.
  • Add the heavy cream and thyme, stirring to create a luscious sauce. Allow it to simmer for about 10 minutes to thicken.
  • Just before serving, sprinkle with freshly chopped parsley.

Notes
