  • 4 large potatoes (Russet or Yukon Gold), peeled and diced Use starchy potatoes for a creamy consistency.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cups shredded sharp cheddar cheese A sharp flavor is recommended.
  • 1 cup heavy cream (or half-and-half) Substitute with non-dairy milk for a lighter option.
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • to taste salt and pepper
  • 2 tablespoons olive oil or butter

Instructions
 

Preparation

  • Start by peeling the potatoes and cutting them into uniform one-inch chunks.
  • Chop the onion and mince the garlic.

Cooking

  • In a large pot, heat the olive oil or butter over medium heat. Add the diced onions and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and sauté for another minute.
  • Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for approximately 20 minutes until potatoes are fork-tender.
  • Using an immersion blender, puree the soup to the desired smoothness, leaving some chunks for texture if preferred.
  • Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and well incorporated.
  • Season to taste with salt and pepper, and stir in the chopped parsley and thyme, allowing to simmer for another 5-10 minutes.

Serving

  • Pour the soup into bowls and garnish with extra cheese, parsley, or crusty bread.
