Italian-Inspired Peach Cookies

Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

Fillings and Decorations

  • 1/2 cup peach preserves Use all-natural if possible.
  • Yellow food coloring (optional) Optional for enhancing color.
  • Powdered sugar for dusting For serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate bowl, cream the butter and granulated sugar together until light and fluffy.
  • Add the egg, vanilla extract, and almond extract to the butter mixture, mixing well until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, mix in a few drops of yellow food coloring.
  • Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet, leaving space between each.
  • Make an indentation in the center of each dough ball using your thumb.
  • Fill each indentation with a small spoonful of peach preserves.

Baking

  • Bake for about 12-15 minutes or until the cookie edges are golden.
  • Remove from the oven and let them cool completely on a wire rack.

Serving

  • Once cooled, dust the cookies lightly with powdered sugar before serving.

Notes

For a tropical twist, substitute peach preserves with mango or passion fruit preserves. Store leftover cookies in an airtight container.
