  • 1 large focaccia bread
  • 1 pound sliced turkey breast
  • 1 cup fresh spinach leaves
  • 1 cup sliced tomatoes
  • 1/2 cup sliced red onions
  • 1/2 cup sliced bell peppers
  • 1/2 cup mozzarella cheese, sliced or shredded
  • 1/4 cup pesto sauce
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • to taste fresh basil leaves (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Slice the focaccia bread horizontally, creating a top and bottom layer.
  • Place the bottom layer of the focaccia on a baking sheet.
  • Spread the pesto sauce evenly over the bottom layer of the bread.
  • Layer the sliced turkey breast over the pesto base.
  • Add the fresh spinach leaves, followed by the sliced tomatoes, red onions, and bell peppers.
  • Sprinkle the mozzarella cheese over the vegetables.
  • Drizzle olive oil over the cheese, and season with salt and pepper to taste.
  • Top with fresh basil leaves if using, then place the top layer of focaccia on the sandwich.

Baking

  • Bake in the preheated oven for about 10-15 minutes, until the cheese melts and the bread is golden.
  • Remove from the oven, let it cool slightly, then slice into individual sandwiches.
  • Serve warm and enjoy!
