  • 1 loaf focaccia bread Soft and flavorful, infused with herbs.
  • 1 pound sliced turkey breast Lean protein option.
  • 1 cup fresh spinach Adds freshness.
  • 1 cup sliced tomatoes Enhances flavor and color.
  • ½ cup sliced cucumber Adds crunch.
  • ½ cup sliced red onion Provides sharpness.
  • ½ cup fresh basil leaves Brings a touch of Mediterranean flavor.
  • ½ cup mozzarella cheese, sliced Provides creaminess.
  • ¼ cup pesto sauce For spreading over focaccia.
  • Olive oil For brushing on bread.
  • Salt and pepper to taste Enhances flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Slice the focaccia bread horizontally to create two large halves.
  • Lightly brush the cut sides of the focaccia with olive oil and place them face up on a baking sheet.
  • Warm the focaccia in the oven for about 5 to 7 minutes until it’s slightly crispy.
  • Remove the focaccia from the oven and spread the pesto sauce evenly over the bottom half.
  • Layer the sliced turkey breast evenly across the bottom half of the focaccia.
  • Add fresh spinach, sliced tomatoes, cucumbers, red onion, and basil leaves on top of the turkey.
  • Place sliced mozzarella cheese over the vegetable layer.
  • Season with salt and pepper to enhance the flavor.
  • Place the top half of the focaccia over the filled bottom half.
  • Press down gently and if desired, wrap the sandwich in foil.
  • Return the sandwich to the oven for an additional 5 to 10 minutes for the cheese to melt and the bread to warm through.
  • Once the cheese is melted and the focaccia is warm, remove from the oven, slice into portions, and serve.

Notes
