Ingredients
  

For the Chicken Kofta

  • 1 pound ground chicken
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional) For extra heat
  • 1 tablespoon olive oil (for grilling or baking)

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic, minced
  • Salt to taste

Instructions
 

Preparation

  • In a large mixing bowl, combine ground chicken, grated onion, minced garlic, parsley, cilantro, ground cumin, ground coriander, paprika, salt, black pepper, and cayenne pepper if using. Mix everything together until well combined.
  • Cover the mixture with plastic wrap and refrigerate for at least 30 minutes.

Cooking

  • Preheat your grill to medium-high or your oven to 400°F (200°C).
  • Once chilled, form the chicken mixture into elongated kofta shapes on skewers or as patties if not using skewers.
  • Lightly brush the kofta with olive oil to prevent sticking.
  • Grill the kofta for about 10-15 minutes, turning occasionally, or bake for 25-30 minutes until cooked through and slightly browned.

Preparing the Sauce

  • While the kofta cooks, prepare the garlic yogurt sauce by mixing yogurt, lemon juice, minced garlic, and a pinch of salt in a bowl.
  • Adjust seasoning to your taste.

Serving

  • Serve the kofta warm with a generous dollop of the garlic yogurt sauce.

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator for up to three days. Alternatively, freeze the kofta before cooking for up to three months.
