Juicy Crockpot Broccoli Chicken and Rice

Ingredients
  

Main Ingredients

  • 2 cups broccoli florets
  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 1 cup rice (white or brown) Brown rice may require longer cooking time.
  • 4 cups chicken broth
  • 1 cup cheese (cheddar or your choice) Mix different cheeses for varying flavor.

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Lightly grease the inside of your crockpot with cooking spray or oil.
  • Layer the shredded chicken at the bottom of the crockpot.
  • Add the uncooked rice on top of the chicken.
  • Pour in the chicken broth, ensuring it covers the rice completely.
  • Sprinkle in the garlic powder, onion powder, and add salt and pepper to taste. Stir the mixture gently to incorporate.

Cooking

  • Cover the crockpot and cook on low for 4 to 6 hours.
  • About 30 minutes before the cooking time is up, stir in the broccoli florets.
  • A few minutes before serving, add your choice of cheese and cover the crockpot to let the cheese melt.
  • Before serving, stir everything well until the cheese coats the rice and chicken.

Serving

  • Scoop portions into bowls and enjoy while hot. Optional: garnish with fresh herbs.

Notes

Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 3 months. Reheat with a splash of chicken broth if thickened.
