Ingredients
  

For the Chicken and Marinade

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste Salt
  • to taste black pepper

For Serving

  • 2 pieces ripe California avocados sliced for serving
  • to taste Fresh cilantro optional for garnish

Instructions
 

Preparation

  • In a bowl, combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Whisk together until well blended.
  • Place chicken breasts in a zip-top bag, pour marinade over them, seal and massage the marinade into the chicken. Allow to marinate for at least 30 minutes, or up to a few hours in the fridge.

Grilling

  • Preheat the grill to medium-high heat.
  • Remove chicken from the marinade, letting any excess drip off, and place it on the hot grill.
  • Cook for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F.
  • Remove chicken from the grill and let it rest for a few minutes.

Serving

  • Slice the avocados in half, remove the pits, and scoop out the flesh. Cut into thick slices.
  • Serve grilled chicken topped with fresh avocado slices and chopped cilantro if desired.

Notes
