Ingredients
  

For the soup

  • 1 tablespoon butter For sautéing
  • 1/2 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth Use low-sodium for a healthier option
  • 1 1/2 cups heavy cream For a rich and creamy texture
  • 4 cups broccoli, finely chopped
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 3 1/2 cups cheddar cheese Shredded or chopped

Instructions
 

Preparation

  • In a deep pot over medium heat, add the butter and let it melt.
  • Add the chopped onions and minced garlic, sauté for about 1-2 minutes until fragrant.

Cooking

  • Pour in the chicken broth and bring it to a boil.
  • Stir in the heavy cream and chopped broccoli.
  • Season with smoked paprika, pepper, and salt, and bring back to a boil.
  • Reduce heat to low and let it simmer for about 20 minutes.
  • Gradually stir in the cheddar cheese until melted.
  • Remove the pot from heat and serve.

Notes

Top each bowl with additional shredded cheese and chopped parsley for garnish. Customize the spice level by adding cayenne pepper or lemon juice for brightness. Store in the fridge for up to 5 days or freeze for up to 3 months.
