Ingredients
  

  • 2 cups almond flour
  • 1 Tbsp baking powder
  • 3 cups mozzarella cheese low moisture and shredded
  • 2 oz cream cheese softened
  • 2 large eggs
  • 1 cup mozzarella cheese for topping
  • 0.5 cup parmesan cheese freshly grated, for topping
  • 0.25 cup cilantro for serving

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper.
  • In a small bowl, whisk together almond flour and baking powder.
  • In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave in 20-second intervals, stirring until melted and smooth.
  • Transfer melted cheese to a food processor. Add eggs and the dry ingredients. Blend until smooth and dough-like.
  • Roll the dough into a large oval shape on the parchment paper.
  • Sprinkle the remaining mozzarella and parmesan cheese over the top, leaving a 1/2 inch border.
  • Bake for 10-12 minutes until golden brown and bubbling.
  • Sprinkle with chopped cilantro before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
