Instructions
Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper.
In a small bowl, whisk together almond flour and baking powder.
In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave in 20-second intervals, stirring until melted and smooth.
Transfer melted cheese to a food processor. Add eggs and the dry ingredients. Blend until smooth and dough-like.
Roll the dough into a large oval shape on the parchment paper.
Sprinkle the remaining mozzarella and parmesan cheese over the top, leaving a 1/2 inch border.
Bake for 10-12 minutes until golden brown and bubbling.
Sprinkle with chopped cilantro before slicing and serving.
