Ingredients
  

Main Ingredients

  • 1 lb ground beef Use 80/20 for richer flavor.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese Feel free to experiment with different cheeses.
  • 1 cup cauliflower, riced Adds texture and keeps the dish low in carbs.
  • 1 tablespoon Worcestershire sauce
  • to taste Salt and pepper
  • for garnish Chopped green onions Adds fresh crunch.

Instructions
 

Preparation

  • Heat a large pot over medium heat and add the ground beef. Cook while breaking it into smaller pieces for 5-7 minutes until browned.
  • Drain excess fat from the browned beef.
  • Add diced onion and minced garlic to the pot. Sauté until the onion is translucent, approximately 3-5 minutes.

Cooking

  • Pour in the beef broth and bring to a gentle simmer.
  • Stir in riced cauliflower and Worcestershire sauce. Season with salt and pepper to taste. Cook for 5-7 minutes until cauliflower is tender.
  • Reduce heat to low, add heavy cream and shredded cheddar cheese, stirring until melted and combined. Avoid boiling.

Serving

  • Ladle the soup into bowls and garnish with chopped green onions.
  • Add extra shredded cheddar on top if desired.

Notes

For a thicker consistency, use xanthan gum. This soup can also be frozen for up to three months. Reheat on the stove over low heat.
