  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup butter (softened) Make sure the butter is softened to room temperature.
  • 1/4 cup erythritol or your preferred sweetener Adjust sweetness according to taste.
  • 1 teaspoon vanilla extract
  • 1 large egg

Mix-ins

  • 1/2 cup sugar-free chocolate chips These are the star of your cookies.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, coconut flour, baking soda, and salt. Whisk until well-blended.
  • In another bowl, cream the softened butter and erythritol until light and fluffy.
  • Beat in vanilla extract and egg until fully incorporated.
  • Gradually add dry ingredients to wet mixture, stirring until just combined.
  • Gently fold in sugar-free chocolate chips.
  • Scoop portions of cookie dough onto a baking sheet lined with parchment paper, leaving space between each scoop.

Baking

  • Bake for 10 to 12 minutes, until edges are golden brown.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
