Ingredients

cottage cheese
4% milkfat

eggs

egg whites

superfine blanched almond flour

aluminum-free baking powder
Instructions
Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing it and lining it with parchment paper.
In a blender, combine the cottage cheese, eggs, and egg whites. Blend until smooth.
In a large mixing bowl, whisk together the almond flour and baking powder.
Pour the blended cottage cheese mixture into the bowl with the dry ingredients. Stir until well combined, forming a thick batter.
Transfer the batter to the prepared loaf pan, smoothing the top.
Bake for 60-70 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
