Base ingredients

  • 1 cup cottage cheese Drain if watery for better texture.
  • 1 large egg
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt Adjust for low-sodium options if needed.

Toppings

  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup sliced olives (optional)
  • 1/2 cup pepperoni, diced (or other preferred topping)
  • 1/4 cup grated Parmesan cheese For sprinkling on top.
  • Cooking spray or oil for greasing baking sheet

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a baking sheet.
  • In a large mixing bowl, combine the cottage cheese, egg, almond flour, baking powder, garlic powder, Italian seasoning, and salt. Stir until well combined.
  • Fold in the mozzarella cheese, bell peppers, onions, olives, and pepperoni until evenly distributed throughout the mixture.
  • Scoop out spoon-sized portions of the mixture and drop them onto the prepared baking sheet, spacing them about an inch apart.
  • Sprinkle the tops with grated Parmesan cheese for added flavor.
  • Bake in the preheated oven for 15-20 minutes or until golden and firm to the touch.
  • Remove from the oven and let cool slightly before serving.
