  • 8 slices large slices of deli-style corned beef High-quality corned beef recommended for best flavor.
  • 4 ounces sliced Swiss cheese Consider alternatives like Gouda or provolone for variations.
  • 1 cup sauerkraut, drained and rinsed Draining helps keep roll-ups crispy.
  • ½ cup keto-friendly dressing
  • 1 tablespoon Dijon mustard Adds a zesty kick.
  • 1 tablespoon olive oil For cooking the roll-ups.
  • Fresh parsley, chopped (for garnish) Optional, for garnish.
  • Black pepper to taste

Instructions
 

Preparation

  • Lay out the slices of corned beef on a clean cutting board or plate.
  • Place a slice of Swiss cheese on top of each piece of corned beef.
  • Add a tablespoon of sauerkraut on top of the cheese.
  • Drizzle a bit of the keto-friendly dressing on the sauerkraut.
  • Spread a thin layer of Dijon mustard over the dressing.
  • Carefully roll each slice from one end to the other, keeping the fillings inside.

Cooking

  • Heat a skillet over medium heat and add a bit of olive oil.
  • Once the oil is hot, place the roll-ups seam-side down in the skillet.
  • Cook for 3-4 minutes until golden and crispy, then turn and brown the other side for another 3-4 minutes.
  • Remove from heat and let cool slightly.
  • Slice each roll-up in half for easier serving and garnish with parsley if desired.
