  • 1 lb Italian sausage Choose high-quality sausage for the best flavor.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced Don't skimp on the garlic for enhanced flavor.
  • 4 cups chicken broth Use low-sodium broth for better control of salt levels.
  • 2 cups kale, chopped
  • 1 cup heavy cream For an extra creamy texture.
  • 1 tsp red pepper flakes Adjust to taste for spiciness.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat a large pot over medium heat.
  • Add the Italian sausage and cook until browned, about 5 to 7 minutes, breaking it into smaller pieces.
  • Add chopped onion and minced garlic, sauté until the onion is translucent, about 2 to 3 minutes.

Cooking

  • Pour in the chicken broth and bring the mixture to a rolling boil.
  • Stir in the chopped kale and red pepper flakes, and let it simmer for about 5 minutes.
  • Lower the heat and add the heavy cream, stir well and season with salt and pepper.

Serving

  • Serve immediately or let it sit for a few minutes to combine flavors even more.

Notes

For a chunkier texture, reserve some sausage and kale to add back after mixing in the cream. Store leftover soup in airtight containers for up to 4 days, or freeze for up to 3 months.
