Main Ingredients

  • 2 cups shredded cooked chicken Use rotisserie, grilled, or leftover chicken.
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 cup chicken broth Homemade broth can add extra flavor.
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Monterey Jack) Experiment with different cheeses.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1-2 jalapeños, diced (optional) Add for extra heat.
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste Season to preference.
  • Fresh cilantro for garnish For serving.

Preparation

  • Heat a large pot over medium heat and add diced onion, sauté until translucent (3-5 minutes).
  • Add minced garlic and cook for an additional minute.
  • Stir in shredded chicken and rinsed white beans, followed by chicken broth, cumin, and chili powder. Optionally add diced jalapeños.
  • Bring to a gentle simmer and cook for about 10 minutes, stirring occasionally.

Cooking

  • Reduce heat to low, add heavy cream and shredded cheese, mix until cheese is melted.
  • Season with salt and pepper to taste and serve hot, garnished with fresh cilantro.
