  • 1 tablespoon olive oil For sautéing
  • 1 pound kielbasa sausage, cut into 1-inch pieces Choose your preferred kielbasa type
  • 1 medium onion, diced Adds sweetness to the soup
  • 1 tablespoon minced garlic For flavor
  • 3 14-ounce cans vegetable broth Can substitute with chicken broth
  • 1 14-ounce can stewed tomatoes Juice included
  • 1.5 cups chopped carrots For added nutrition and flavor
  • 1 8-ounce can tomato sauce Enhances the tomato flavor
  • 1 cup water
  • 1.5 teaspoons salt-free seasoning blend Adjust to taste
  • 1.5 cups bow-tie pasta (farfalle) Can substitute with other pasta

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the kielbasa pieces and sauté for about 5 minutes, until browned.
  • Stir in the diced onion and minced garlic, cooking for about 10 minutes until the onion is soft and translucent.
  • Pour in the vegetable broth and stewed tomatoes (juice included).
  • Add the chopped carrots, tomato sauce, and water. Stir everything well.
  • Sprinkle in the salt-free seasoning blend and mix thoroughly.
  • Bring the mixture to a boil, then reduce the heat to low, and cover the pot to simmer for about 30 minutes.
  • Add the bow-tie pasta and continue to simmer for another 12 minutes, or until the pasta is cooked al dente.
  • Taste and adjust the seasoning if needed before serving.

Notes

Serve with crusty bread and garnish with fresh parsley or cheese for added flavor. Adjust vegetables and spices according to your taste. Can be made ahead and reheated.
