Kiwi Sorbet

Main Ingredients

  • 6 medium ripe kiwis Use ripe kiwis for the best flavor.
  • 1 cup granulated sugar Adjust to taste.
  • 1 cup water For simple syrup.
  • 3 tablespoons fresh lime juice Can substitute with lemon juice if desired.
  • a pinch salt

Instructions
 

Preparation

  • Peel the kiwis and cut them into small pieces.
  • Place the kiwi pieces in a blender or food processor.

Making Simple Syrup

  • In a small saucepan, combine the sugar and water.
  • Heat over medium, stirring until the sugar fully dissolves. Let it cool slightly.

Blending

  • Pour the simple syrup into the blender with the kiwi, then add the lime juice and salt.
  • Blend until completely smooth and there are no kiwi pieces left.
  • Taste the mixture and adjust sweetness if necessary by adding more sugar. Blend again if you add sugar.

Freezing

  • Transfer the mixture into a shallow container, cover, and place it in the freezer.
  • Every 30 minutes, stir the sorbet with a fork to break up any ice crystals for about 2-4 hours until fully frozen and fluffy.

Serving

  • Once the sorbet has reached the desired texture, scoop it into bowls and enjoy!

Notes

Serve with fresh kiwi slices or a sprig of mint for garnish. Consider drizzling with passion fruit puree or honey for extra flavor.
