Ingredients
  

For the Marinade

  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • Salt and pepper to taste Seasoning to enhance the flavor

For the Skewers

  • 1 lb boneless, skinless chicken thighs Cut into bite-sized pieces
  • Skewers If using wooden skewers, soak in water for at least 30 minutes

Preparation

  • Combine gochujang, soy sauce, sesame oil, honey, minced garlic, grated ginger, salt, and pepper in a medium bowl to create the marinade.
  • Cut the chicken thighs into bite-sized pieces and marinate them for at least 30 minutes, preferably overnight.

Cooking

  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken pieces onto the skewers, spacing them evenly.
  • Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
  • Remove from the grill and optionally garnish with sesame seeds or sliced green onions.

Serving

  • Serve the skewers with sides like kimchi and rice, and drizzle some leftover marinade for extra flavor.

Notes
