  • 3-4 pounds beef chuck roast A high-quality cut of beef is ideal.
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 inch piece fresh ginger, grated
  • 1 cup low-sodium beef broth
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons sesame oil
  • 2 carrots, cut into chunks
  • 1 cup baby potatoes, halved
  • 1 tablespoon corn starch
  • 2 tablespoons water
  • Salt and pepper, to taste
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions
 

Preparation

  • Pat the beef chuck roast dry with paper towels. Season it generously with salt and pepper on all sides.
  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Once hot, add the roast and sear it on all sides until browned, about 3-4 minutes per side. Remove the roast and set it aside.
  • In the same pot, add the sliced onion and sauté for about 3 minutes until it becomes translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  • Pour in the beef broth, soy sauce, and brown sugar. Stir well, scraping the bottom of the pot to release any browned bits.
  • Return the roast to the pot, add the carrots and baby potatoes, and drizzle with sesame oil. Make sure the vegetables surround the meat.

Cooking

  • Cover the pot with a lid, reduce the heat to low, and let it simmer for about 3 to 4 hours until the meat is fork-tender.
  • Once cooked, remove the roast from the pot and set it aside on a cutting board. Cover it with foil to keep it warm.
  • In a small bowl, mix the corn starch with water to form a slurry. Stir this mixture into the remaining sauce in the pot. Increase the heat to medium and cook for about 5-10 minutes until the sauce thickens.
  • Slice the roast against the grain and return it to the pot, allowing it to soak up the flavor of the sauce.

Serving

  • Serve hot, garnished with chopped green onions and sesame seeds.

Notes

For best results, use a high-quality cut of beef and allow enough time for simmering. Adjust the sweetness and umami levels to your liking using alternative sweeteners or adding chili flakes for heat. This dish can be made ahead of time for deeper flavors.
