Ingredients
  

For the Turkey Filling

  • 1 lb ground turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • ¼ cup soy sauce
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper, to taste Use according to preference

For Assembly

  • slider buns or mini rolls
  • sliced green onions, for garnish
  • shredded carrots, for garnish
  • cucumber slices, for garnish

Instructions
 

Cooking the Turkey Filling

  • Heat a large skillet over medium heat. Add the sesame oil and swirl it to coat the pan.
  • Add the chopped onion and sauté until it softens, about 3-4 minutes.
  • Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  • Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Season with salt and pepper.
  • In a bowl, combine the soy sauce, gochujang, brown sugar, and rice vinegar. Pour this mixture into the skillet, stirring to coat the turkey evenly.
  • Add the cornstarch slurry and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the meat.
  • Remove from heat and prepare the slider buns.

Assembling the Sliders

  • Spoon the turkey mixture onto the bottom half of each slider bun.
  • Top with shredded carrots, cucumber slices, and sliced green onions for freshness.
  • Close with the top half of the slider bun and serve immediately.

Notes

For extra crunch and flavor, consider toasting the slider buns before assembly. Leftover turkey filling can be used in lettuce wraps or as a topping for rice or noodles.
