  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 4 cups beef broth Use low-sodium for better control over salt
  • 2 cups water
  • 2 teaspoons Italian seasoning
  • 1 cup uncooked pasta (such as ziti or elbow)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • to taste Salt and pepper
  • for garnish Fresh basil Optional

Preparation

  • Heat a large pot over medium heat and add the ground beef, break it apart while it browns.
  • Once the beef is browned, add the diced onion and minced garlic; cook until the onions become translucent, about 3 to 5 minutes.
  • Pour in the crushed tomatoes, beef broth, and water, then stir in the Italian seasoning along with salt and pepper to taste.
  • Bring the pot to a gentle boil.
  • Add the uncooked pasta and let it simmer on lower heat until the pasta reaches al dente texture, stirring occasionally.
  • Fold in the ricotta cheese until well combined.
  • Ladle the soup into bowls and top each with mozzarella cheese and fresh basil.
