  • 1 lb ground beef Choose a good quality ground beef for the best flavor.
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 8 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese For extra creaminess, stir in cream cheese or ricotta.
  • 1/2 cup grated Parmesan cheese For garnish.
  • Fresh basil for garnish Adds freshness.

Preparation

  • Heat a large pot over medium heat. Add the ground beef, chopped onion, and minced garlic, cooking until the beef is browned. Drain excess fat.
  • Add crushed tomatoes and beef broth to the pot. Stir to combine.
  • Introduce broken lasagna noodles along with dried basil and oregano. Season with salt and pepper.
  • Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes to soften the noodles.
  • Once the noodles are tender, stir in shredded mozzarella cheese until melted.

Serving

  • Ladle the soup into bowls and garnish with grated Parmesan cheese and fresh basil.

Notes

You can freeze the soup for up to 3 months. For a spicier version, add red pepper flakes.
