Cookie Base

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon juice Use freshly squeezed for best flavor.
  • Zest of 2 lemons Use organic lemons for best results.
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

For Dusting

  • Powdered sugar For dusting before serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the eggs, fresh lemon juice, and lemon zest. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Spread the batter evenly into the prepared baking dish.

Baking

  • Bake for 20-25 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
  • Once done, remove from the oven and let cool in the pan.

Serving

  • After cooling, dust with powdered sugar before cutting into squares or rectangles.
