  • 2 cups spinach or kale, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients: chicken, orzo, broth, cream, vegetables, and seasonings.
  • Heat olive oil in a large pot over medium heat.
  • Sauté diced onion and minced garlic for about 2 minutes.
  • Add diced carrots and celery, cooking for 5 to 7 minutes until tender.

Cooking

  • Pour in the chicken broth and bring to a rolling boil.
  • Add orzo pasta and cook as per package instructions, typically 8 to 10 minutes.
  • Once orzo is al dente, reduce heat to low and stir in heavy cream, shredded chicken, and chopped greens.
  • Squeeze in lemon juice and stir in lemon zest, then season with salt and pepper.
  • Ladle soup into bowls and serve warm, optionally garnished with fresh herbs.
