Preparation

  • In a large bowl, mix the cottage cheese, eggs, milk, lemon zest, lemon juice, and sugar until well combined.
  • In another bowl, combine the flour, baking powder, baking soda, and salt. Mix until evenly dispersed.
  • Gradually add the dry mixture to the wet mixture. Stir gently until no dry flour remains, but avoid overmixing.
  • Let the batter sit for about 10 minutes.

Cooking

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form and the edges look set, about 2-3 minutes.
  • Flip and cook for another 2-3 minutes until golden brown.
  • Repeat with the remaining batter, greasing the skillet as needed.
