Ingredients
  

  • 8 oz Orzo Pasta
  • 1 lb Shrimp peeled and deveined
  • 1 cup Feta Cheese crumbled
  • 2 lemons Juice and Zest
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic minced
  • Fresh Parsley for garnish chopped

Instructions
 

  • Bring a large pot of salted water to a boil. Add orzo and cook according to package instructions, about 8-10 minutes. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque.
  • Remove skillet from heat and stir in cooked orzo, lemon juice, and lemon zest until well combined.
  • Fold in crumbled feta cheese and chopped parsley, mixing gently to combine.
  • Serve immediately, garnished with lemon wedges if desired.

Notes
