Instructions
Bring a large pot of salted water to a boil. Add orzo and cook according to package instructions, about 8-10 minutes. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque.
Remove skillet from heat and stir in cooked orzo, lemon juice, and lemon zest until well combined.
Fold in crumbled feta cheese and chopped parsley, mixing gently to combine.
Serve immediately, garnished with lemon wedges if desired.
