  • 12 ounces dried spaghetti
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 5 large garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes or more, for extra heat
  • 1 large lemon (juice and zest)
  • 1/3 cup chopped fresh parsley
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 2 ounces Parmesan cheese, freshly grated

Preparation

  • Begin by bringing a large pot filled with salted water to a brisk boil. Add the dried spaghetti and cook it according to package instructions until it’s firm to the bite, about eight minutes. Remember to stir occasionally to prevent sticking. Once it’s perfectly al dente, drain the spaghetti in a colander, reserving about one cup of the starchy pasta water.
  • In a large skillet, pour in the olive oil and butter, heating them over medium heat until they start to shimmer and bubble. Add the minced garlic along with the crushed red pepper flakes and sauté until fragrant, about thirty seconds. Be careful not to let the garlic brown.
  • Once the garlic mixture is ready, gently toss in the drained spaghetti and pour in 1/4 cup of the reserved pasta water to help combine the ingredients. Toss continuously until well-coated, adding more pasta water as needed.
  • Remove from heat and fold in the lemon juice, lemon zest, and chopped parsley. Season with kosher salt and freshly ground black pepper to taste.
  • Transfer to a serving bowl or platter and top with freshly grated Parmesan cheese. Serve immediately.

Notes

For variations, consider adding grilled chicken, sautéed shrimp, or seasonal vegetables. This dish is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to three days.
