  • 1 cup unsalted butter, softened Ensure the butter is at room temperature.
  • 1 cup granulated sugar
  • 1 large egg Room temperature is ideal.
  • 1 tablespoon lemon zest, freshly grated Use fresh lemons for best flavor.
  • 2 tablespoons lemon juice, freshly squeezed Fresh juice preferred.
  • 2 ½ cups all-purpose flour Spoon into measuring cup and level off.
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • to taste sparkling sugar, for coating

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg, lemon zest, and lemon juice. Beat until fully combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, mixing until just combined.

Shaping and Baking

  • Roll the dough into 1-inch balls and roll in sparkling sugar.
  • Place on a baking sheet lined with parchment paper, leaving 2 inches between each cookie.
  • Bake for 10 to 12 minutes, or until edges are lightly golden and centers are still soft.
  • Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes
