  • 1 cup lentils Brown or green lentils work best.
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Optional garnish

  • Fresh parsley For garnish

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, sauté for 2-3 minutes until fragrant.
  • Introduce the diced carrots and celery. Sauté for another 5-7 minutes until softened.
  • Stir in the lentils, diced tomatoes, and cumin.
  • Pour in the vegetable broth, ensuring lentils are covered.
  • Bring to a gentle boil, then lower the heat to a simmer and cover the pot.
  • Cook for about 30 to 40 minutes until the lentils are tender.
  • Taste and adjust seasoning with salt and pepper.
  • Use an immersion blender for a smoother consistency, if desired.
  • Serve hot, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months. Can be customized with additional vegetables or spices.
