  • 1 cup ricotta cheese Use fresh ricotta for best results.
  • 1 cup almond flour You can substitute with other nut flours if desired.
  • 2 large eggs Best if at room temperature.
  • 1/4 cup grated Parmesan cheese Adds a savory flavor.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped Optional for garnish.
  • 1 amount Cooking oil or spray For greasing the baking sheet.

Preparation

  • In a large mixing bowl, combine the ricotta cheese, almond flour, and eggs. Stir until well-blended and smooth.
  • Add in the grated Parmesan cheese, salt, black pepper, garlic powder, onion powder, and parsley if using. Mix until all ingredients incorporate well.
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking oil.
  • Using a spoon or a cookie scoop, form small balls of the ricotta mixture and place them onto the prepared baking sheet, leaving some space between each one.

Baking

  • Bake for 15–20 minutes, or until the pillows are light golden brown and firm to the touch.
  • Remove from the oven and let them cool for a few minutes before transferring them to a serving platter.

Notes

Serve these pillows with various dips like yogurt or pesto for enhanced flavor. To make them lighter, fold in whipped egg whites before baking.
