Ingredients
  

Cookie Base

  • 2 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter (softened)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt

Filling and Dusting

  • 1/2 cup strawberry jam
  • to taste cups powdered sugar for dusting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Mix in the vanilla and almond extracts.
  • Gradually incorporate the flour and salt into the mixture, stirring until the dough comes together.
  • Roll the dough out on a floured countertop to about 1/8 inch thickness.
  • Cut out shapes using a cookie cutter, creating 'windows' in half of the cookies.

Baking

  • Arrange cookies on a parchment-lined baking sheet and bake for 10-12 minutes until lightly golden.
  • Let them cool completely on a wire rack.

Assembly

  • Spread a generous amount of strawberry jam on whole cookies and top with the cut-out cookies.
  • Dust with powdered sugar before serving.
