Ingredients
  

For the Cookie Dough

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 1/2 cup ground almonds
  • 1 teaspoon vanilla extract
  • 1/2 cup fruit preserves (jam of your choice)
  • pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cream the softened butter and powdered sugar together until light and fluffy.
  • Mix in the vanilla extract thoroughly.
  • In a separate bowl, whisk together flour, ground almonds, ground cinnamon, and pinch of salt.
  • Gradually combine the dry ingredients with the creamed mixture until a soft dough forms.
  • Chill the dough in the refrigerator for about 30 minutes.

Shaping and Baking

  • Roll out the chilled dough on a floured surface to about 1/8 inch thick.
  • Cut out shapes using cookie cutters, and create holes in half of the cookies.
  • Bake the cookies in the preheated oven for about 10-12 minutes.
  • Allow the cookies to cool completely on a wire rack.

Assembly

  • Spread fruit preserves on the solid cookies and top them with the cut-out cookies.
  • Dust with powdered sugar before serving.

Notes

Store in an airtight container with parchment paper between layers. They can be frozen for up to three months.
