  • 4 large russet potatoes Good quality for crispy fries.
  • 1 tablespoon olive oil For coating the fries.
  • 1 teaspoon smoked paprika Adds a smoky flavor.
  • 1 teaspoon cayenne pepper Adjust according to heat preference.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Topping Ingredients

  • 1 cup shredded cheese (cheddar or your choice) For topping the fries.
  • ½ cup sliced green onions For garnish.
  • ½ cup sour cream For serving.
  • Hot sauce to taste Optional, for extra heat.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the russet potatoes. Cut them into thick strips to make fries.
  • Place the potato strips in a large bowl and drizzle with olive oil. Toss to coat.
  • In a small bowl, mix the smoked paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt.
  • Sprinkle the spice mixture over the potatoes and toss again until evenly distributed.

Cooking

  • Spread the fries out in a single layer on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
  • Remove the fries from the oven and immediately sprinkle the shredded cheese on top.
  • Return the loaded fries to the oven for an additional 5 minutes, or until the cheese melts.

Serving

  • Once done, remove from the oven and top with sliced green onions, a dollop of sour cream, and your favorite hot sauce before serving.

For best results, use good-quality russet potatoes and slice them uniformly. Soaking cut potatoes in cold water for 30 minutes before baking helps ensure crispiness.
