Ingredients
  

Dry Ingredients

  • 2 cups white whole wheat flour Boosts fiber content
  • 2 tsp cornstarch Helps with texture
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • ½ cup unsweetened applesauce Healthier fat substitute
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup granulated sweetener of choice Choose your preferred sweetener

Mix-ins

  • 1 cup chocolate chips of choice Dark or semi-sweet for richer flavor

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the white whole wheat flour, cornstarch, baking powder, baking soda, and salt.
  • In another bowl, whisk together your chosen sweetener, unsweetened applesauce, melted coconut oil, and vanilla extract.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Gently fold in the chocolate chips.
  • Scoop the dough and form it into approximately 16 balls. Place these on your prepared baking sheet.

Baking

  • Bake in the preheated oven for 10-12 minutes or until edges are lightly golden.
  • Let the cookies cool on the sheet for about 10 minutes before transferring them to a wire rack.

Notes

Consider chilling your dough for 30 minutes for chewier cookies. Store in an airtight container at room temperature for up to a week.
