Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • 1/4 cup rolled oats
  • 1/4 cup coconut sugar Can be substituted with other sweeteners
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsweetened applesauce Can be replaced with mashed banana for variation
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup Optional for extra sweetness

Add-ins

  • 1/4 cup mini dark chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the almond flour, rolled oats, coconut sugar, baking soda, and salt. Stir until well mixed.
  • In another bowl, mix together the applesauce and vanilla extract. If you prefer a sweeter cookie, add the maple syrup at this stage.
  • Pour the wet ingredients into the dry ingredients, blending thoroughly until you get a thick cookie dough.
  • Fold in the mini dark chocolate chips to the mixture.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet with enough space between each.

Baking

  • Bake in the oven for 10-12 minutes or until the edges turn golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
