  • 1 pound large shrimp, peeled and deveined Fresh or properly frozen shrimp for best results.
  • 2 cups fresh spinach
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream Light cream can be used for fewer calories.
  • 1 cup shredded mozzarella cheese Keep an eye on it while baking.
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced Can be increased for a garlic-forward taste.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil For sautéing.
  • to taste Fresh basil, for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Incorporate the fresh spinach and cook until wilted, which takes about 3-4 minutes.
  • Add the chopped sun-dried tomatoes and stir to combine.
  • Pour in the heavy cream, and mix in the Italian seasoning, salt, and pepper. Allow the mixture to simmer for about 5 minutes.
  • Add the shrimp to the skillet and cook for an additional 3-4 minutes, or until they turn pink and opaque.
  • Transfer the mixture to a baking dish. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over top.

Baking

  • Bake the dish in the preheated oven for 15-20 minutes, or until the cheese is golden and bubbly.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before serving.
